Ingredients
1tbsp of Hemp or Olive Oil
1/2 Spicy Chorizo Sausage – Sliced
4 Cloves of Garlic
1 White onion finely sliced
1 tbsp of Paprika
1 red chili chopped
Salt & Pepper
300ml of red wine
2 Sprigs of rosemary (leaves pulled off)
Method
Heat Hemp or Olive in a large frying pan and add the onion (reduce the heat so they cook soft) for 5mins
Add the chorizo, garlic, chili, rosemary leaves, and season – increase heat back to full – cook for 4mins
Add the red wine and reduce the heat to just under medium heat and cook for 7mins
Cover the pan and leave to simmer for 5mins before serving.
Serve alongside other tapas dishes or just some crusty / sourdough bread
