GARLIC MUSHROOMS IN WHITE WINE

Ingredients


1 tbsp of Hemp(or Olive) Oil

5 finely chopped shallots

6 cloves of garlic – crushed and chopped finely

1 green chili chopped

4 sprigs of thyme (leaves pulled off)

300g of brown Chestnut Mushrooms

350ml of white wine

Salt and Pepper


Method

Heat the oil in to a wok and add the shallots

Reduce the heat to medium to gently soften them

After around 5/6 mins add the chili, garlic, thyme for 2 mins

Add the mushrooms and increase the heat to highest setting for a couple more minutes

Add the white wine & seasoning, leave to bubble for around 8 mins then cover the pan and leave to simmer away for about 5 minutes.


Serve in a bowl with some crusty bread
